I could eat Mexican food every meal but in reality only eat it about 1-3 times a week! I made chicken and bell pepper fajitas last night for dinner but, really I don't need an excuse to eat fajitas or any other Mexican food, it's my fav! I have tortillas and salsa in my fridge at all times so I never have to go without.
I also made a little pitcher of Sangria with a bottle of red wine, about a cup of cranberry/pomegranate juice and sliced strawberries. Good good stuff, not too sweet.
